Trick for iced coffee in the morning?

I make my iced coffee in the morning using a 3-cup moka pot, the trouble is it's inconvenient and cuts into my time in the morning. I have to stick the coffee in the freezer to cool down as rapidly as possible, which takes around 30 mins. I'm not willing to pour hot espresso over ice–it ruins the flavor. Since I'm not willing to get up earlier, do you guys think it's a viable idea to brew the espresso ahead of time and keep it in the fridge? Assuming it is, can I then have a pitcher of the brewed coffee that will always remain cold? How long before it would 'go bad', or not taste as fresh? Or what other possible downsides could there be to this?

For example, if I brewed 4 days worth of coffee on Sunday and cooled it all in this pitcher to drink for the week, I would simply have to measure the coffee content per day and be good to go, right?
