Pour Over Variables: When for What?

[V60]

Hello friends.

I've taken a deep dive into coffee recently and am trying to study it and learn about it with the open-est mindset possible.

I have come to learn that while your gear is important, the variables in the actual brewing play an immense role in the outcome of the coffee.

So, my vague and open question to you is: in your experience, how do you decide when and what to do for a certain type of coffee? (Grind size, temp, brewing method, timing, water, etc.)

I am mainly eager to learn because I want to be able to bring out certain characteristics of a coffee and know the science behind it for future reference.

I'm not looking for a "correct" answer – I am more curious as to how others approach this matter.

Thank you all very much in advance.

P.S. Science is very welcome.
