Coffee buying for absolutely clueless people?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

(I tried looking at the wiki before asking this, but I could not get it to load. A me issue? probably.)

I've been watching a lot of James Hoffman recently and he's got me absolutely fascinated with coffee. I don't drink it (I'm an entirely tea person) but I have several family members who do. I wanted to buy them a little something, not super fancy (it'd probably be wasted on us anyways, these people are head over heels for gas station coffee) but a little nicer than what they'd usually get, since it'd be for the holidays. However, again, I have no idea what I'm doing. I rotate through the same few flavors of tea and branch out once every two years- here in coffee town I can't tell my ass from a hole in the ground.

I do kind of know what I'm vaguely looking for (the coffee beginner guide on James Hoffman's channel was helpful) but I don't know where to start looking for roasters. There's not many cafes near me that I'd be comfortable barging into and demanding coffee recs from, and the coffee beginner guide avoided listing brewers. Is there anywhere you all would suggest looking?

Or, if you want to give more specific suggestions:

Person 1: Getting a grinder and either a plastic V60 or an Aeropress, because they like el-cheapo drip coffee and french press coffee but they don't have electricity and are constantly breaking their french press. Likes light to medium roasts, specifically hazelnut flavored.
Person 2: Lives with person 1, has to suffer them, and also has to share the grinder and V60/Aeropress. Has similar tastes too, but gave their favorite type of coffee as "Blonde. Moar caffeine."

Person 3: Has a K-cup and one of those silly baskets but I don't think they use it and they love that K-cup, so if there's any roasters that make their own K-cups that's probably ideal. Least helpful with the liked coffee as all I could get out of them was "Dunkin Donuts classic"
