Brewing coffee in liquid other than water? (Beet juice, ginger ale, etc)

Hello all,

I have been into coffee for a long time, I typically brew with a french press or a Clever dripper.

I got to thinking lately, would it be interesting and flavorful to brew coffee in a liquid other than water? Beet juice and ginger ale popped out to me as interesting possibilities, but maybe other options could be orange juice, tonic water, maybe beer?

I pondered on it and I don't think these liquids would damage my Clever or french press, just need to be careful of pulp I suppose if a juice but I think in the Clever at least the filter paper would take care of that.

But before I tried it I wondered if anyone else has heard of this? Or know of good techniques if you have? Does it work? Or nah? Very curious to get insight from the coffee subreddit, I wonder if this could potentially be a new trend we could popularize. Pairing particular coffee beans with certain liquids, adjusting grind perhaps based on the drink brewing with, etc.

Well what do you think?
