minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Weird bitter layer when poured with the rest of the coffee

I finally brewed my pour-over coffee with relatively fresh coffee beans, unlike the previous ones where I ground it with stale coffee beans. I poured roughly half of the carafe into my mug, and it tasted nice, pleasant, a little sour, and watery, akin to under extraction. I ran the rest of the coffee into my mug, and the bitterness overwhelmed me. There's also this "oily" substance on top of my coffee.

Was it the old coffee beans? I cleaned up my grinder but there's still some particulates I cannot get out.
