I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Turkish coffee, no foam?

Friends brought me a cezve and coffee from Istanbul. I made 10 experiments yesterday trying to figure out how to brew it on a gas stove, but I could not get anything resembling foam. Sure smelled good, though.

Lacking Turkish coffee cups to measure with, I settled on 3 tbsp of water, 1 tsp of sugar, and 1 heaping tbsp of coffee by taste. When that failed to foam, I put my grinder on its finest setting and tried French roast, still no foam. This with various times and temperatures.

How can I make Turkish coffee at home on a gas stove?
