Trying to find recipy for good turkish coffee

I've been trying to make good turkish coffee for over a month now, and i am stating to think that i've been doing something wrong. Or maybe i use the wrong pot (thin bottom instead of thick as they often recommend). I tried medium heat and full heat, two table spoons, three tea spoons (for medium size cup), mixing and not mixing during brewing, dark roast or light roast – the result is always the same: instead of distinct rich and dark (which i tasted in several completetly unrelated restaurants in different contries), chocolate-like flavour all i got is something between instant coffee and lemon. Any ideas, why it might happening and/or how to fix it?

Thank you for responding
