I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Tokyo speciality coffee tastes watered down?

Title says it all.

Currently in Tokyo and trying out speciality coffee cafes and roasters around the city and it seems pretty consistent that the coffee tastes watered down? Vs coffee I normally get on the west and east coast in the US.

Don’t get me wrong the coffee taste good and I can get the tasting notes and sweetness of the single origins, but the initial slurps seems water downed or under extracted?

From seeing how they make the pour overs, they take a lot of care on details and I don’t see anything wrong in their technic or recipe per say.

I was wondering if the style of pour over is just different here. Anybody else had the same experience?
