I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Roast level mismatch?

So I bought a 2lb bag of Ethopia Gera Estate single origin / natural anaerobic process from a reputable roaster. When I opened up the bag I noticed the beans range from very light (very obviously light roasted) to medium brown, to very dark (which under normal circumstances I would peg for a dark roasted bean). While I'm not a coffee roast expert, I'm certainly not new to coffee, yet this is the first time ever when buying from a specialty coffee roaster that I notice the beans have such a massive color/visual roast profile "mismatch" between them.

Additionally, this particular bean is hard to brew. If brewing at higher temps and finer grinds as I normally would for a single origin light roast, it has a notable bitterness in there that my other light roasts do not, as well as a heavier body, which makes me wonder even more.

Is it possible this bag is a roaster error and the beans are lacking a roast uniformity, or is this normal for natural anaerobic process beans, or something else entirely?
