Please help me understand coffee so my wife can stop drinking bad coffee

Dear coffee lovers and hot beverage enthusiasts, I come to you for advice in my hour of need.

My wife likes to drink coffee, and while she doesn't need the caffeine so much, she really enjoys having a cup of coffee once or twice a day. The problem is, the only coffee we have at home is the cheap instant coffee type, and she says it's not very good but is simple and quick and she doesn't want to invest more time into making her coffee. Every time we go to a coffee shop, she will get a nice large cup of coffee and will look so happy with it, I want to bring that feeling to home.

I would be very happy to learn how to make a great cup of coffee and do it for her every day but here is my problem, I physically cannot drink coffee, as caffeine can make me really sick. So I am incapable of tasting the coffee to know if it's good and then searching what type of coffee she likes best.

I have spent the past couple of weeks doing some research here and there so I have a decent idea of what I am getting into, I just can't figure out where to start. My wife likes to drink long coffee, so I am not sure I should be looking too much into the small french or Italian espresso and the fancy espresso machine that makes them. For now, I am thinking more into a french press or moka pot to start and I understand it is better to grind the beans directly before brewing also.

Knowing all this, my issue is I just don't understand what tool would give me the best versatility to start introducing my wife to better drinks than her Nespresso gold instant coffee (which according to my research and my nose, smells, and tastes just burnt).

Thanks for your support on my quest 🙂
