My coffee tastes like wine. What does that mean?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

My coffee tastes like wine. What does that mean?

I don't necessarily mind it, it was just kind of wild so I was wondering if it means I over or under extracted, or maybe this is right and happens sometimes. It's an iced pourover and taste reminds me of cold red wine. The beans are either Peruvian or Nicaraguan (can't remember which are in my hopper)

Edit: Seems like the general consensus is that it might be under extracted, which makes a lot of sense now that I think about it (if I need a total of 250 g of water, I've been using some of that as ice and then the remaining X% as hot water that goes through the grounds (for example, 100g ice, 150g hot water). I'll change it up and see what it does or if I prefer it wine-like. Thanks all!
