How to figure out what recipe to use when brewing a new bag of coffee?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

How to figure out what recipe to use when brewing a new bag of coffee?

Let's say you buy new beans that you've never had before, where do you start in order to build a good recipe to get the most flavor out of those beans? Do you guys start basic and go from there or do y'all have some strategy?

I sometimes find myself struggling and will try to brew the best cup all throughout the bag and sometimes never really feel like I hit the spot with some coffee's. Especially when they've tasted wonderful in a cupping session and I strive for that taste. Any tips or ideas? I'm primarily thinking about pour over but welcome to ship in on thoughts about espresso as well!
