Gifted beans from my dad but the coffee isn’t "right"

My dad is super into coffee and I had some a couple weeks ago that tasted incredible! He made me 3 bags at different roast levels to decide my favorite, and I've excitedly brewed it up. However it isn't tasting right. I only have a French press and a small Mr coffee pot. It tastes bland and bitter. Almost like the flavor isn't coming out! I brewed 2 pots and the results have been the same. I made a cold press with similar results. I don't want to tell my dad because I feel bad about it not being the same when it should be. What else can I try!?
