I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Hey everyone, I recently picked up a Breville Barista and have gone down the rabbit hole….

I am dosing 18g beans on the finest setting (to the point it feels like I am over extracting) with the built-in grinder. I bought some locally roasted beans from an Amish market (figured they'd be fresh lol) called Yoder's (link: https://www.yodersrestaurant.com/hope-coffee-blends/house-blend-ground-whole-bean/?back=yoders_products). I have also tried darker Peets coffee beans and starbucks coffee beans (although I have been trying to source fresher beans locally hence the Amish market).

Anyway, the details:
18g of beans
finest grind setting
36g output of espresso
extraction takes anywhere from 28 seconds to 36 seconds
machine is preheated for like 30 minutes
I tried multiple shots so machine was definitly warm for the later shots (all were sour)
I tamp very hard as well as shake the basket before tamping to try to get an even distribution

It is worth mentioning at first, the liquid that comes out of the machine is very dark for the first few drops, and then turns lighter color like orang-ish? I do get foam on the top of the espresso. For some reason everything I do just seems pretty sour.

I did get a shot yesterday with these fresh beans that tasted heavenly, however this morning it just keeps coming out sour.

It's also worth mentioning the water I put into the machine is from a zero water filter so I don't believe it could be my water source.

Can anyone help/give any tips?
