minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Bitter first few sips

Hey! I've been going deeper into the world of coffee and would love to learn more about consistently getting better cups. I usually brew light to medium roasts with a Hario switch and find that my first several sips are pretty bitter, not unbearable, but more reminiscent of a dark roast, which makes me think something went wrong while brewing. After those first sips, I get that sweetness and complexity that the roast should have, and when I get to the very last few sips, I get a TON of sweetness which is very nice. Is there a way of getting a consistent drinking experience or is this just the nature of coffee? I do wait a few minutes for my cup to cool down, as well and stir my coffee. Could it just be my taste buds blocking out the bitterness after the first sips? Would love some advice or thoughts on this! Or if anyone wants to get nerdy enough to share some drinking temperatures 🙂
