Why do my 14:1 chemex cups always taste kind of watery?

I have a Chemex and I recently got an Encore grinder for Christmas. I had been doing a 14:1 ratio but lately the coffee just tastes watery and kind of weak. I’ve been doing a pretty short bloom, maybe only 20 seconds and then pouring the rest pretty continuously. Should I do shorter pours after the bloom instead of pouring most of it all at once after the initial 20 seconds?

My encore is set to 20 for grind size and I use a gooseneck kettle set to 205 degrees, and filtered water. I see people doing ratios up to like 16:1 and I don’t get how the coffee doesn’t come out super watery!
