Would it be safe to use Kinu to grind White Coffee?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Would it be safe to use Kinu to grind White Coffee?

I recently came across White Coffee and have been fascinated with the idea of giving it a go. From what I've read it is roasted lesser than light roast and thus very dense. I'll be trying to roast it myself. But from all the information online it warns against using any non commercial grinder to grind white coffee. But all info stops at that. There's no white coffee available in my country, India. Thus I'll have to scratch my own itch. Idea is not to satisfy my taste buds but satisfy my curiosity. But before I undertake this, I'd rather hear other people's experience, if any especially with the grinder concern.
