Why doesn’t South Indian Filter Coffee taste more bitter?

I'm from India and I've just recently started learning about how various coffee brewing techniques work. South Indian Filter Coffee uses ultra fine grinds, similar to an espresso or maybe even finer, with a brewing time of upto 10 mins or more. Shouldn't such a long extraction time result in very bitter coffee especially when espresso only uses about 30-45 seconds of brewing time ?

Sorry if this is a stupid question but I've only started to understand how coffee works. Thanks in advance 🙂
