Why does my coffee taste bad

Hi guys I was just wondering if I could get some advice. I have recently purchased a medium roast coffee from “pact” the coffee description is as follows:

Taste notes: dates & raisins

Sweetness: dried fruits

Acidity: Apple

Mouthfeel: Syrupy

I purchased the coffee whole bean and it has now been 4 days since it has been roasted. I have a Wilfa svart Aroma grinder.

My problem is that I’ve brewed the coffee in my v60 a total of 4 times now with varying settings on the grinder (grinding finer every time) and every time my coffee tastes terrible. To me it tastes quite sour and just generally bad.

The setting on the grinder is now set to “S” on the aeropress setting and I have been using 15g of coffee to 250g of water every time.

If anyone has any advice on how I could make a better brew or where I am going wrong then I’d be very grateful!
