minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

V60 – Weird film forming during brew

Every morning I brew a single cup V60 using fresh as possible beans, and no recipe change (currently the James Hoffman one cup) but recently as the brew goes, around the 2:30 mark, my brew quickly slows down almost to a halt.

At first I had no idea what it was until I lifted the filter + grounds + water up, and noticed a very very thin transparent film that has developed during the brew period at the bottom of the brewer.

Any insights on what may be causing that? Right now my fix just lifting the filter and quickly putting it back down which 'pops' the film, but I would like to avoid it if possible
