I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Struggling to get good tasting espresso from a 15g VST basket

I just got a 15g VST basket but struggling to get good tasting espresso like I do from a 18g VST basket.

My setup: Breville dual boiler, Niche zero, 1.7mm 100micron puck screen (pre-heated), WDT, 15g VST basket, good fresh medium roast beans, 93deg, 14g in and 28g out in about 25-30sec including 7sec pre-infusion.

The espresso has the bitterness that comes from over extraction (I think) that I have no way of getting rid of. I use bottomless portafilter so I know there is no channeling and the flow looks fine.

I use the 18g for most of the time which delivers consistently good results and good taste. Just can't get the same from the 15g basket as I was trying to cut on the coffee being used and consumed. I feel it's because I have to go quite a bit finer for a 14g dose and still keep it in the 30sec range.

Any ideas how I can not waste the investment into the 15g basket?
