minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Recommendations on upgrading my coffee grinder

I've been thinking about this for a while and thought this was the best community to get feedback from. For context, I currently use a cuisinart burr grinder and usually get beans from costco (sometimes a nicer bag if it is gifted) and brew pour overs, however I would like to some day get into making espresso. I just finished up medical school, so not a ton in the way of disposable income so this is what I'm currently thinking about:

I'm leaning towards something like a baratza encore. I've heard that there is the possibility of modifying a baratza encore to extend into espresso grind size but I'm still relatively new to all of this. I'm also not against a good hand grinder if for the same price I would get a better product (it's just me and my SO drinking coffee, so not a ton to grind currently). I could probably ask for some money for the holidays and maybe extend into the price bracket of a fellow ode if that is a far superior product. I think something like the niche is out of my price bracket.

Any suggestions/thoughts are much appreciated! From the US if that helps with product availability.

TL;DR: Relative new comer on a budget, wanting to upgrade my burr grinder.
