Not getting good results from frozen beans

minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Not getting good results from frozen beans

When i buy a bag fresh and use it in my V60 or Chemex, i get great results. After the first two days i freeze the rest. I only recently started doing this so i can rotate through 2 different bags.

The issue is that when i use the beans from the freezer, I don’t get the same results. The results are always more bitter, and both my brewers end up brewing slower. When the water is added to the grounds, they seem to “foam” and expand. This does not happen with my fresh beans.

Grind size on my Baratza is the same both ways. Water temp is 207F both ways.

Anyone have any thoughts on this?
