Need help with my V60

Hi,

I'm following the James Hoffman guide to V60 to a T, but I find myself having to grind incredibly coarse to hit the time target, resulting in a weak and watery cup. I use a Lido 3 for the beans, 15g of beans and 250g of water.

Is there something I'm missing somehow? I went to a fancy 3rd wave coffee place and asked the barista for some advice but they couldn't help me either.

Things I haven't yet tried is making my own water, and I just get whichever V60 filters I can get. Currently using these

Any suggestions on how to reduce brew/drawdown time? here's what the bed looks like after.
