I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

My v60 brews are bitter – can you help me troubleshoot?

I’m using a size 02 Hario v60, a manual burr grinder, and a gooseneck kettle.

I use 15g of coffee, grind it to what I think is slightly less course than what I would use for a French press, start a timer and bloom with 50g water. At 30 seconds, I pour up to 150g of water total over the span of 1.5 minutes total, give the v60 a gentle swirl, then pour to 250g water total until about 2 min 15 seconds total have passed. Then I let it drain until 2.5 minutes.

It’s just bitter. I can taste some good components initially but it’s followed by this awful bitter aftertaste. I thought it was my grind setting, but I have messed with the grind a lot and the bitterness has only slightly improved through these tweaks. My next guess is that maybe my water is too hot, as I take it right off the boil when I start to bloom. Any other suggestions?
