minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

I recently got a $500 Breville Bambino Plus, and I'm trying to make a latte that tastes at least as good as my old $20 Moka Pot.

Following the 1:2 extraction ratio, 18g of ground espresso makes ~40g of liquid, which is far from the amount I need to make an 8oz latte taste like anything except milk with a hint of coffee.

How do the speciality coffee shops get such coffee-forward lattes if they're using this ratio? I just want a good tasting, 8 oz latte that I can sip with my breakfast. What should I do? Ignore the gram ratio and go for a solid 2 oz pour regardless of weight? Better beans, better grind? Halp. Merci beaucoup.
