I recently thought I'd take the plunge into the world of espresso and buy the Gaggia Classic Pro as the unit has a good heritage, is well built and has a 58mm portafilter.

I have a Baratza Encore which I use just for drip coffee, and I'm not attempting to use it for espresso. For now I'm buying freshly roasted local coffee which is ground at the shop to espresso fine on a Mahlkonig.

I used a WDT to distribute the grounds and break up any clumps, then tamped with the plastic tamper the machine came with. At no surprise to anyone, it's garbage.

I tried following their recommendation to use 2 scoops of coffee for a double in the pressurized portafilter, which came out to about 16 grams. It pulled a 1:2 shot in 8 seconds and tasted so sour it was undrinkable.

I then tried upping the dose to fill the basket more, going up to 17 grams. This pulled a 1:2 shot in 12 seconds and was the same, completely undrinkable.

The question is, what variables can I change? I plan on buying a proper tamper but I don't think that would slow the shot down by a factor of 2.5.

I have a 9 bar OPV spring on the way, and maybe that'll slow shots down with the reduced pressure? I think the unit ships with a 15 bar OPV.

I haven't tried using the unpressurized portafilters yet as surely they'll provide even less resistance and make the shot faster.
