[Espresso] Should I increase my dose to avoid bitterness?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

[Espresso] Should I increase my dose to avoid bitterness?

Because, I am on the lower end of dosing. Info:

15g beans in. 38g liquid out. Takes 23 seconds.

I didn’t want to go over 15g purely to save a bit of coffee and therefore money, but I can bump up to 18g. I didn’t want to go lower than 38g out because I would find it’s too little to enjoy the drink.

Now if I go much finer than I am with these settings (I use Eureka Mignon), I get channeling. Right now I don’t get channeling, but it only takes 23 sec and it’s still bitter. It’s a medium roast btw.

What should I try?
