I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Don’t underestimate the importance of the water you are using !

This post is meant for newbies like me, I know many of you already know this, but I wanted to tell my little experience of today which really blew my mind.

So I started drinking specialty coffee a few weeks ago, and I had heard about the importance of using good water but I didn't really care. I was using filtered tap water, because I live in a place where we have quite hard water.

I bought a 1kg pack of very freshly roasted Myanmar Long Hay specialty coffee for quite cheap last week, and because I knew I wouldn't have time to drink it all within the next 8 weeks, I decided to take the opportunity of having cheap high quality coffee to make plenty of experiences with it.

So today I tried some cupping using the same coffee but changing the water. One with filtered tap water before descaling the kettle, one with filtered water after descaling the kettle, and one with good quality bottled water (Volvic).

I was blown away. I thought the biggest difference would be descaling the kettle, but absolutely not! I can barely taste the difference. But with the Volvic, the coffee suddenly comes to life, it's incredible. So much more aroma, acidity, sweetness, I almost didn't believe it.

So long story short, water is so much more important than I thought! Next time I'll try filtered tap water, then filtered with a brand new filter, then filtered multiple times, because I don't like to consume lots of plastic bottles. Any tips maybe ?
