Dialing In New Beans

Doing pour overs at home. Assuming I keep all variables as close to constant as possible, I’m curious how I might effectively and efficiently dial in a new bag of beans, ones I’ve never worked with before.

The one variable I’m assuming I would adjust for is grind size; if possible, I’m trying to avoid simply making a bunch of full pour overs with variations to the grind.

I have a Hario V60 01 and a COMANDANTE C40 MK4.

I like to try new (to me) beans quite often, so once a current stash runs out, I commonly buy some other offering from a specialty roaster.

How would someone go about dialing in a new bag of beans, often with little reference points, that somewhat efficiently gets to a good cup of coffee?

Is grind size the most important variable? If not, what?
