minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Coffee too fresh?

I’ve been letting my beans degas but it seems to take so long before they are even usable? I’m ordering 2-3 weeks in advance before using them (cafe not home) and they still seem to be too “fresh” or is it another problem?

I have beans roasted on 2nd feb and I’ve been using them past few days and there is micro bubbles, crema is inconsistent. Also the milk just seems to be reacting to it? Even when my milk is perfect, as soon as I pour, it goes bubbly. I used the same milk for a decaf and no issues.

Machine is clean, grinder clean, proper distribution, dosage, yield and time.

I just don’t know what’s wrong?
