Coffee suddenly has developed a peppery flavor

minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Coffee suddenly has developed a peppery flavor

I was enjoying a 1kg bag of "house roast" coffee beans and making them daily in my V60. About half of the way through the bag, it suddenly developed a distinct black pepper flavor. If the characteristic flavor was a subtle sweetness, it's been replaced by a dominating peppery-ness. Or something. Like you ate grapefruit and chased it with wine. Or think like strong McDonald's coffee.

It seems to have changed overnight. It's not just me (others can taste / smell it). The coffee beans were left in the bag; the only thing I can think is that the vent was no longer "functional" because the bag was rolled closed.

Does this sound familiar to anyone? I've had the bag for about a month stored in a cool dry place. And no, there are no pepper corns in the coffee.

EDIT: Everything else tastes fine. It's not the 'rona.
