Categorizing coffee in stores and its application.

Hello there,

I wonder what the real impact of categorizing coffee by online stores is. That is, for example, we have a category of brewing methods and in them, according to which coffees are placed? Is it true that coffee placed in the "for espresso machine" category, or under "espresso", or "for a coffee maker", "aeropress", is not suitable for a different brewing method than the one assigned to it? If so, what determines it? Is it mainly about the level of grain roasting? Is it about specific notes that follow the way you smoke? I heard that for aeropress coffee is light, MAX medium roasted, and for espresso dark roasted – why? I am a beginner in this world and I am looking for answers to such, you could say, "banal" questions.
