I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Best 2 months after roasting WHAT?

TL;DR I may be "inexperienced" so can 2 month old beans be best?

I bought a "premium" coffee box and another set of beans from an online shop yesterday. Both are Colombian. The premium is a "Passion Fruit Huila" which I guess is the area and some kind of tasting note (which did turn up for once). The other is labelled Tamesis. I don't know what that is, maybe a made up name or a region, whatever.

The Huila was roasted 2 months ago. The Tamesis was roasted one month ago. I complained via email.

Today I got a call from supposedly the roaster, who claimed they tested the Huila roast up to 6 months old and found that the best period was 2 months after roasting. Naturally he also claimed that for Tamesis it was a month after roasting (not UP TO a month….a straight month after roasting).

I've always found beans best a few days after the roast date on the bag, maybe a week max. I've had bags that lasted for whatever reason a month to 6/7 weeks, and found that the flavor goes from let's say 100% -> 85ish%.

The guy is putting money where his mouth is, so to speak. He invited me for a cupping later this week. I don't know how to trust that the beans will be as aged as he claims unless he opens a bag in front of me though.
