Baratza Encore Help

I got a Baratza Encore as a Christmas gift and have been very happy with the way it grinds. However, I now feel totally lost with brewing. I’m using a v60 and everything was going pretty well with my cheap hand grinder I was getting proper tasting notes and generally very good coffee. Now that I’ve switched to the Encore I’ve got nothing but kind of bitter coffee. Keeping other factors stable I have went from a grind setting of 16 to a grind setting of 24 and still can’t get it right.

I’m not sure exactly what to do.

Any help is appreciated.
