Automatic drip brew dialing in: Adjust heat first, or grind size?

Since I've started using my Breville Precision Brewer, I've been "tweaking" a lot to find the best parameters for each coffee I use. The two biggest variables are water temperature and grind size. For darker roasts, I start at a brew temp of 175 or so, and a fairly coarse grind, around 35 or 36 on my Baratza Virtuoso. More heat and/or finer grinding will then increase extraction, and when it starts to get bitter, it's time to back off a bit. But, which should I vary first? Increase temp, or decrease grind size? I can make a mental case for either way. The scientific method suggests only changing one variable at a time.

I'm getting some truly great coffee out of this machine. Bitterness is a thing of the past, and even with some modest underextraction, the resulting brews haven't been sour, they've just seemed a little weak. But once I hit the sweet spot for a given bean, it's awesome.

Thoughts?
