minimum dose size?

I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Different espresso recipe?

I work at a cafe where they are using a dark roast blend and they are pulling 32g from a 18g dose for espresso. Strangely however, they pull it in 6 seconds instead of the usual 20s-30s.

I’m not sure why they don’t use the standard recipe and am too afraid to ask because I’m new here. I know there can be variations to the standard recipe by playing with pressure, temp, dose etc, but surely a 6s extraction time is wildly off?

Is it possible that there can be multiple extraction “windows” for a given roast?

Why has it become standard for 20s-30s extraction time for espresso? Is it possible for some roasts to fall outside this standard entirely?
