New Setup Help

So, I had a loads of problem with brewing aeropress without good grinder and scale. So, I was finally able to get a scale , temperature probe, and timemore c2.

I just got Aldi Hondurus Organic beans (I spend a lots of money this month on grinder okay!! cut me some slack)

So, give me your receipe. Also, if anybody has tried aldi's beans, let me know grind size for aeropress and temperature.

Edit: I'm trying hoffman receipe but I might be using too hot of a water because I'm using boiling water with 17 clicks on timemore. It is sour and bitter at the same time with no sweatness. I also have Lavazza espresso Medium roast if you want me to help me with these beans

Thanks for your help
