French press coffee too watery

Hi everyone!

I have been an instant coffee drinker for a long time, but I decided to upgrade. Did my research, and I settled for the French press, it just seemed like the process was fun!

So I got myself a burr hand grinder, a small French press, and some nice single origin beans.

Using Hoffmann's method, my coffee comes out bland and watery. I changed the grind size to be finer (by all Internet images I find they're medium) , I even tried stirring the coffee in to make sure its saturated before the first rest, but I haven't had any luck yet. The coffee has a good aroma, and I feel like it would taste great if only I could get it right!

I follow the ratio and the instructions closely to the video. Should I try to add more coffee? Or grind it even more finely? Just trying to make sure I'm not missing something else, that's causing this.

Also in case it's relevant, I've brewed it in a smaller batches (350ml and 200ml),while still following the same ratio.
