Clever dripper drawing down too fast

I'm not sure what I'm really doing wrong here. I'm using 20g grounds, 320g water and I have a 1zpresso JX. I started with it set to 20 (60 clicks), it drew down in 30 seconds yet still came out bitter. Even though the drawdown was very fast I opened it to 23 (69 clicks) and it wasn't bitter but instead kinda hollow and still drew down in 30 seconds. I know it's supposed to take around 1 min to draw down but I'm not sure what's happening.
