Hi! Recently started making cold brew and no matter what variables I adjust, it seems to always come out sour? I read that sourness is due to under-extraction, so I have tried smaller grinds as well as longer brew times (12-48 hours). I’ve also tried a dark vs medium roast, leaving on the counter vs in the fridge, and various water:bean ratios (4:1-7:1, by volume), but to no avail. I made a really good batch once with a cheap blade grinder (20 hours in fridge, 4:1 ratio), but recently switched to the OXO burr grinder and haven't made a good batch since. Beans are Kirkland Signature Colombian Supremo if that's of relevance. Any advice?
