I use the Hario switch to brew my coffee and am trying to reduce my caffeine consumption. Hence I would like to brew smaller cups of coffee. I am currently using 10g of coffee with 160g of water. (1:16 Ratio) I am wondering if there is a minimum amount of coffee...

Bought an aeropress, single origin beans, baratza encore, and making..okay coffee?

I'm normally someone that absolutely loves coffee. Before we moved out, we had a Jura impressa at my parents house which we used with plain old beans bought from the supermarket. Honestly, probably tasted a bit better than what I'm putting out right now.

I ordered these beans https://www.penstockcoffee.com/shop-coffee/indonesia-sulawesi-sisola-mill-anaerobic-red-honey and I feel like I'm going crazy just making..decent coffee over and over. My girlfriend doesn't really like it. I'm okay drinking it but its nothing like "wow I love this". I tried different methods but have been focusing on the Hoffman method but playing with grind size a bit. Sometimes its too bitter, others there's no real coffee aroma after its brewed. Am I doing something wrong? Do I just not like these beans? Do I change my method some more, do I order new beans, give up?
